Catering Menu

The following items are from the 2007 catering menu. Please note that menu items may change from season to season, and we do not make final decisions about our menu until May, but this list provides a representation of typical choices. And, we are happy to work with you to develop a menu and cater to your tastes!  

 

Appetizers

Grilled Skewers (prices per each)

Chicken: rosemary-rubbed breast strips with brown-sugar-cracked-pepper bacon  2—

Buffet

We highly recommend providing a breakfast buffet for the guests of your event the next morning! 

Choose from:

Meats: Apple wood bacon, Korobuta ham, venison sausage, maple-glazed salmon
Scrambled eggs or the chef’s specialty quiche
Breads and pastries: cinnamon rolls, croissants, French toast, bagels with cream cheese
Specialties: smoked trout crepes or buttermilk biscuits with maple-sausage gravy
Granola and oatmeal
Fresh fruit platters

Beverages: milk, juice, coffee, and specialty drinks from our espresso bar

Lunch and casual affairs

Barbecue at the Gazebo

We can accommodate the day before your big event as well with a no-host buffet at our outdoor Gazebo!

Choose from:

St. Louis ribs or grilled chicken in Redfish Signature BBQ sauce, marinated tri-tip sirloin, pulled  pork, or grilled salmon
Green salad, Caesar, fresh fruit, black beans, cabbages slaw, mustard potato salad, or pasta salad
Potato chips or corn chips with homemade salsa
Salmon and potato chowder
Fresh rolls, buttermilk biscuits, or corn bread

Beverages: sodas, iced tea, bottled water, wine, and beer 

Pricing varies on the size and needs of your event

Meals are served semi-buffet from the gazebo.
